Bolo de Bolacha (Portuguese Biscuit Cake)

Sounds very appetizing, doesn’t it? Learn how to make this classic and irresistible Portuguese dessert, famous for its simplicity and unique flavor.


Ingredients:

    1. 300g Maria biscuits
    2. 200ml strong black coffee, cooled
    3. 200g unsalted butter, softened
    4. 150g powdered sugar
    5. 3 egg yolks

Instructions:

    1. Boil coffee; pour into shallow bowl; chill.
    2. In a large bowl, beat softened butter and powdered sugar until slightly fluffy. Add egg yolks and 1 to 2 tablespoons cooled coffee. Whisk thoroughly until the cream is smooth and pale yellow in color. Set aside. 
    3. Spread a thin layer of cream in a circle on a serving plate. Quickly dip each Maria biscuit into the coffee, ensuring it doesn’t get too soggy. Arrange 7 dipped biscuits in a flower pattern on
      the cream-covered circle. Repeat the process, alternating layers of cookies dipped in coffee and buttercream, until you have used all the ingredients.
      Make 4-5 layers, finishing with a layer of buttercream.
    4.  Cover the sides of the cake with the remaining cream.
    5. Refrigerate the cake for at least 4-6 hours, or preferably overnight, to allow the flavors to combine and the cake to set.
    6. Before serving, you can decorate the top with Mary cookie crumbs or cocoa powder if you like.
    7. Slice and serve chilled.
